Michelin Review - Tsuta - Hong Kong




I am fully ready for some Michelin-starred Ramen!




Impression

As one of the ramen fans, I always keep an eye on seemingly good spot to enjoy the ramen. This Michelin-star place has long been sitting on our list and finally we were here. The place was cozy in general and mostly were high seats that you could have the full view of the kitchen. Quite an interesting part to see clearly how the staff prepared the ramen and handled the ingredients for the diners. We can see they are very focused and specialized in their own part of the whole process - transparency is the key.


The first thing we tried was of course the Miso Pork Ramen with Egg (HKD 149) as it is one of their must-order dish. We were surprised by the strong flavour of black truffle and the synergy between it and the miso. Such a great combination! The sliced pork was thinly cut with not much fat on them. The soft-boiled egg have been well handled and marinated long enough to have a unique taste of sweetness inside the yolk. The soup base was slightly more salty than we thought, but still very strong in the flavour of miso.


The Teriyaki Chicken Ramen with Egg (HKD 107) was another trial. The texture of the soup base was thicker than the above one and less salty. We love how tender the chicken was and the strong taste of chicken in the soup base. Let me repeat, it was super strong! The meat has also been grilled in a good way. By the way, you could order 4 pieces of chicken with a higher price, instead of the one we ordered (2 pieces as the picture shown below). As a side note, the salad veggies look a bit odd to me as it was not a really good item to serve with ramen.


Meet and Exceed?

Both of the ramens we tried were good, with up-to-standard quality of the soup base and the ingredients. They have lived up to the level that deserved the award received and being praised by its overall decent presentation and the consistent quality. The only thing that might hesitated us was the texture of the noodles - we might prefer softer ones. Still, we are glad that we found another good spot to satisfy our ramen cravings!
