Restaurant Review - Sushi Waza - Hong Kong
On the night for a decent Omakase...
Impression
The place was cozy with very authentic Japanese-styled design. Every seats have been set next to the bar that full transparency could be ensured for the diners. We have chosen the set "Moon" (HKD 1080 per person) which Appetizer, Sushi (15 pieces), Soup and Dessert are included.
We started our night with this awesome appetizer. The sesame sauce on the salad taste very unique, a bit like vanilla flavour, and we guess it was homemade. The oyster was as huge as my palm! Fresh and creamy as expected and definitely a good start for a delicious omakase dinner.
The Sesared Flounder Sushi is very fatty and searing it makes it an every greater treat to eat. The fish melts in your mouth immediately, literally like the super soft and moist marshmallow. Don't trust me. Try it yourself.
The salmon roe in this Salmon Roe Sushi has been marinated before served, giving it a almost fruity flavor, and removes all the fishy smell you usually taste from other fish roes. Yummy!
This Aka uni sushi is one with a generous amount of uni on top. Very creamy and refreshing. One thing to mention is that a tiny portion of wasabi has been added to almost every sushi and the amount was just perfect! Nothing too much and too little.
Okay, we have to say we like the seared version of this Seared Toro Sushi even better. Just look at the fat dripping off from the fish and smell the aroma of the seared toro. One of the best of sushi we have tried tonight.
Toro is undoubtedly the best part of a tuna, and for good reason. The fat on this Toro Suhi are interlaced between the fish meat, making this sushi a pleasure to look at, and of course to satisfy our belly as well.
This Hairy Crab Sushi was packed with lots of crab meat on top. Saves you the trouble of picking out all the crab meat from its shell. Just sit back and enjoy a whole mouthful of freshly cooked crab meat.
The abalone rice is paired with sauce made from its liver. We were skeptical about the sauce, but it tastes better than we expected. Appreciate the effort to make use of every parts of the abalone in order to make it taste even fresher, and reduce food wastage haha.
To be honest, we have eaten a lot of mackerel in the past but we were not disappointed on this Mylopharyngodon Sushi at all. Not only does it look appealing, the taste of it was so much juicier than we expected.
Doederleinia Berycoides Sushi is another one that is fresh and chewy. Well, to our surprise, it definitely doesn't smell fishy. By the way, the marinated side dishes always pair good with the fish and of course is something you should not skip.
The fish on the Chi Fish Sushi looks very colourful and eye-catching. It's a joy to even just look at the sushi. The sprinkled green onion under the sashimi gives an extra kick to the overall flavour of the sushi.
The prawn on the Spot Prawn Sushi has been handled in all the right way. The moisture of the prawn is just exactly as what it should be, giving it a very creamy texture, without the fishy smell that raw prawns usually have.
The look of this Ark shell sushi is simply gorgeous, and one will not be disappointed by the taste either. The clam is fresh and almost crunchy. No doubt, it becomes one of my favourite sushi of the night.
The texture of the Hokkaido Horse Mackerel Sushi is chewy and flavourful even without much soy sauce. The slicing is perfect and for sure this one is a great dish for anyone who enjoy the freshness of fish sashimi.
The scallop used here for the Scallop Sushi is fresh and very tender. I think the scallop has a hint of grapefruit flavor, a unique yet appetizing match.
The sashimi on the Flounder Sushi looks crystal clear and almost transparent. Looking at the chef making this sushi in front of you takes the experience to a whole new level. It has already been slightly dipped in the soy sauce to bring out the extra freshness so within one second it was already in my tummy.
This Toro Sushi Roll was one of my favorite dishes on the night. The fatty toro is cut up and mixed with bits of herbs and pickles. A really great combination. The seaweed wrap is seared carefully to make it extra crispy. Half way through and realized the fish oil has been dripping along our palm. Pairing it with soy sauce - we wish we could have 10 more of this dish tonight.
This pickled gourd sushi roll is a vegetarian one with the distinguishing chewy texture. A bit more wasabi has been added for this one and we guess that's because the taste could be level-up-ed. It is a very traditional sushi roll.
This Strawberry Tofu Pudding dessert is a final dish to sum up this wonderful dinner. The pudding itself was too sweet for us - but the red bean paste and the berries have been presented in a nice way. Well, we came here not for the dessert so we in fact did not mind it.
Meet and Exceed?
A lot of direct interactions with the chef have been taken place during the night, and we enjoyed them so much. We did feel that the omakase set has let the beauty of sushi fully shines by the careful presentation and creative preparation. The way of handling a piece of sushi requires years of practice and countless efforts to make it perfect, and this place was close to it. We truly appreciated the details that had gone to the dishes and make each of one of them look and taste like a piece of art.
