Restaurant Review - Cubus 28 - Hong Kong


Creative fusion items in a chill environment!



Impression 

It's always a myth to me whether fusion food are good. First thing that I truly appreciated is that the team has put enormous efforts in creating something new, maybe the term lateral thinking could be used - mix & match different concepts, cooking method and ingredients, to create something new with values. What attracts me to here is that apparently it operates as a Western bar, but when you look at the menu, you would be surprised to see a dim sum as fusion as "Siu Mai with Sea Urchin and Black Pearls". Wow! Even that night I was alone, I still decided to visit the place and give it a try.


This Avocado quinoa and crab meat salad with sea urchin (HKD 168) gave us a surprise just by knowing its combination. Never come across similar dishes! I would like this salad is dominated by seafood, but somehow successfully added the elements of fresh fruits - including the avocado, beetroot sauce and the edible flowers. The mixture of crab meat and the quinoa gave a very creamy texture to this dish and paired well with the finely sliced avocado. The portion was tiny, but definitely served as a refreshing starter.


The Pan fried Prosciutto radish cake with XO sauce (HKD 108) is under the category Dim Sum. How fusion is it? Some kale salad on the side haha! As a class dish, radish cake is one of my all time favourites. This items has added the critical Western element Prosciutto as a game-changer, in order to create a new flavour of this item. Very flavourful with the right amount of seasoning - not being overly salty with slight spiciness because of the XO sauce. A yummy one!


Meet and Exceed?

This place occupied both the 27th and the 28th floor of this building. When we arrived at the 27th floor, we were brought by a staff to 28th and were told that both floors are basically the same, just the seats in 28th are more comfortable. From our observation, the setting at the lower floor seems to be drink-focus with high tables; whereas the floor that we were brought to is more like the fine-dining setting with all the right elements in creating a romantic and classy environment. With the professional service and absolutely creative dishes, I do not see any reasons for not coming again, not alone, but with family and friends.
